Rick salmon suggest to shoot for the highlights…what does that mean and how do I do that?

He meant that you should expose for highlights to make sure that they are not blow out. In digital world, you can more easily recover info from the shadow, then highlights. Once the highlights are totally blown out, there’s nothing there to rescue.

When you shoot Raw, you will have more flexibility.

Of course Oksana is absolutely right. Nothing worse than a pic that is
blown right out in the bright areas – totally useless and a guaranteed delete!
Raw is the only way to go.
Just a couple of personal thoughts.
