Caucasian skin is very close to Middle Grey, so if you meter the skin with your spot meter you should get good results. The other case are people with darker skin. If you meter of the darker skin, there is a great chance that they will be overexposed, since camera will try to even them out to middle grey and ad more light. In this case you want to use exposure compensation.

But I know how it is with kids they are moving super fast, so matrix metering can make your life a bit easier.

There is nothing wrong with cropping the head and the chin sometimes. I think it works for this photo, since it is all about the eyes. I just wander how it will look in color or with more contrast. I looks kind of flat to me.

Use Matrix as your default. Spot should be used if only a very small portion of the photo is important for light value, such as a dancer lit with a spotlight on an otherwise darkened stage. Experiment with your camera, taking the same photo, but changing the type of metering.

I like her expression. She's probably upset with you for chopping off her head and chin.
