I am not a Canon user, but I did find this discussion about what you are trying to do.
Make sure you read all the posts as at the end they talk about a program called "Picture Style Editor".

This doesn't look easy, but it is possible.

Hi,

I am using a canon eos 1100d and I am trying to explore its features. Does anybody know if it is possible for me to highlight only one colour and rest in black and white by selecting a proper picture style? If yes, can somebody guide me how do i do this?

Thanks

Sharu
