I don't think it will matter, especially if you're shooting in RAW. Since you'll have the gray card in the shot with your subject and you'll be using the White Balance Selector tool in Lightroom, you should be good to go. But I always try to start with the setting that makes the most sense for the situation you're in -- if you're outside and it's sunny, use the sunny setting. Just use RAW and you can make easy adjustments afterwards.

Experience is the best teacher. Take a few test shots using Daylight, Shade, Fluorescent, etc. and find out for yourself if it will make a difference. The initial shot will have a color cast depending on which setting you picked, but that will instantly disappear once you use the white balance tool.
